Pumpkin puree plays a starring role in Thanksgiving desserts, but you should consider making it a more regular part of your diet. Plus, it’s easy to use pumpkin puree in a variety of recipes from sweet to savory. I buy organic pumpkin puree in a BPA-free can from the health food store.
Frozen Banana & Pumpkin Green Smoothie Recipe
1/4 cup pumpkin puree
1 tablespoon raw almond butter
1 stalk sliced celery
1 cup kale
2 cups spinach
1 handful sliced cucumber
1 teaspoon ground cinnamon
1 banana (frozen)
purified water (as desired for consistency)
Method: Blend all ingredients until smooth; serve cold.
A few tips: I keep celery, kale, spinach, cucumber, and bananas chopped/sliced and in the freezer, but you can use fresh versions if you’d prefer. Not everyone loves celery in their smoothies, so feel free to leave it out or just use less.
